Miso Kale soup
Ingredients: 1 bunch kale, 1/2 cup miso, 2 quarts water Pull leaves off of stalks of kale, rinse thoroughly. Tear leaves into bite size pieces and put aside. Bring 2 quarts of water to a boil in stock pot, then turn off heat. Combine 1/2 cup miso and 1/2 cup of the boiling water in bowl and stir until miso is dissolved. Pour dissolved miso mixture into stock pot with water, then add kale pieces. Continue to keep heat off! Serve promptly after 15 to 20 minutes, after kale has had a chance to wilt.
